A take on street chaat

Pakoras & fennel mousse with mango chutney

Fried chicken wing, braised lettuce, black garlic mayonnaise  with sweet chilli & garlic sauce

Roasted scallop, ceviche, smoked tomatoes, peppers with coriander & curried cauliflower purée

Lamb chops, spiced lamb shoulder, lamb fat gnocchi & red currants with Chettinad Masala sauce

Sheep’s yogurt, cardamom ice cream & fresh honeycomb with Bombay mix

Toasted rice, coconut parfait, Darjeeling jelly & burnt coconut ice cream with pistachio custard
